So I decided to test it out. I made a pourover of Halfwit's Yirgacheffe, a roaster out of Chicago. I made a cup of his instant coffee next to it. To me, the difference was HUGE. The instant was just dishwater, while the yirg had an explosion of intricate flavors. I put them into the same cups and mixed them up so even.
