Wilton Benitez of Granja Paraíso 92 in the Cauca region of Colombia is the most-celebrated specialty coffee producer of the last three years. He placed first at Cup of Excellence Colombia 2021 with a Pink Bourbon, fourth in 2022 with a Sidra, and second in 2023 with a Sudan Rume. His thermal-shock processing technique (rapid temperature cycling during fermentation) is the method that put Pink Bourbon on the global map. Five different specialty roasters across the US, Canada, and Australia are currently carrying his lots. Who is Wilton Benitez

Wilton Benitez operates Granja Paraíso 92 in the Cauca region of southwestern Colombia, at altitudes between 1,600 and 2,100 meters. His farm became globally known after the 2021 Cup of Excellence Colombia auction, where his Pink Bourbon lot placed first. Subsequent COE placements (4th in 2022 with Sidra, 2nd in 2023 with Sudan Rume) confirmed it wasn’t a one-year story.

What makes the Benitez program distinctive isn’t any single varietal; it’s the breadth of experimental processing applied to a portfolio of cultivars including Pink Bourbon, Red Bourbon, Caturra, Sidra, Sudan Rume, and Striped Borbón. Within the catalog we’ve seen lots processed as natural, washed, anaerobic natural, anaerobic washed, double anaerobic, thermal shock washed, EA decaf, and various hybrids. Each lot is intentionally engineered for specific aromatic targets rather than processed to a default.

Modcup (Jersey City) is one of the few US roasters with consistent direct-relationship access to Granja Paraíso 92; this is the production-quality version of the lot that placed first at Cup of Excellence Colombia 2021.

The anaerobic natural fermentation survives EA decaffeination cleanly. Buy this if you want to taste the Benitez profile without the caffeine.

The thermo-shock washed process is Benitez's signature technique: rapid hot/cold cycling during fermentation that locks in the cultivar's florality. Five Senses' Australian roasting program runs slightly more developed than American-style Benitez roasts, which makes this the version most milk-friendly on this list. Notable as the only non-North-American roaster currently carrying a Benitez lot in the catalog.

Striped Borbón is a phenotype expression of standard Borbón; rare on its own, much rarer in the Wilton Benitez catalog. Devoción's program is built on direct producer relationships and editorial transparency, and a Striped Borbón placement is itself a signal that the green relationship is mature. The most expensive lot on this list, but distinctive cultivar territory.

Anaerobic washed is the cleaner cousin of the anaerobic natural in the Rogue Wave decaf above; same producer, same farm, different fermentation. Two decafs from the same producer at different price tiers tells the breadth of how Benitez's program now spans format and process. Detour is the smaller-roaster value entry in this batch.

What to pick if you’ve never tried his coffee

Start with the Modcup lot. The thermal-shock washed Pink Bourbon at a Northscore of 87 is the cleanest representation of what made Wilton Benitez famous; the cultivar, the farm, the process, all aligned. Once you have that reference cup, the Five Senses thermal-shock washed lot reads as a more milk-friendly variation of the same idea, and the Devoción Striped Borbón shows you how the program extends beyond Pink Bourbon. The two decaf lots (Rogue Wave and Detour) are for buyers who want the producer profile in a caffeine-free format, a specialty category that simply didn’t exist five years ago.
