The vast majority of these coffees are washed, emphasizing the clean, structured acidity that defines the region. You will find a heavy concentration of Bourbon and Caturra varieties, particularly from high-altitude regions like Huehuetenango, which accounts for a quarter of our current inventory. While traditional washed profiles dominate, we also feature experimental and carbonic maceration lots for those seeking more complexity.
