This one is more for the archives as there's nothing about it on here yet. Wichita is home to Reverie Coffee Roasters. They were the first real roaster to open up a shop in Wichita (that I know of) and they have a great store. They have nitro on tap, and a brew bar with V60, Chemex, French Press, or whatever you want..
