I cracked open a bag of The Future - Mai Tai from Black & White, and even just off the roast date, it's so good. I've brewed it a few times now and it seems to favor a longer brew period than a shorter one. Grinding the coffee at 14 on my Baratza Encore yields a drain time of 3:00-3:30.
