Colombia is the volume capital of specialty coffee. Coffee grows year-round across a north-south gradient that produces two annual harvests, and the producer-cooperative infrastructure built over decades means specialty Colombian is more available, more consistent, and often more affordable than equivalent quality from other origins. Huila and Tolima dominate the high-end specialty conversation; Nariño in the south produces some of the cleanest, most acidic profiles; Cauca and Antioquia are gaining attention. The varietal mix favors Caturra and Castillo, but the last five years have seen aggressive experimentation with Geisha, Pink Bourbon, and Sidra (a Bourbon-Typica hybrid native to Ecuador-Colombia). What makes Colombian specialty distinctive in 2026 is the producer-led process experimentation — carbonic maceration, anaerobic ferments, thermal shock — pushed by names like Sebastian Ramirez, Wilton Benitez, and Nestor Lasso.
