...which is obviously intentional. All of that is to say I don’t think this is necessarily a trend—quality-minded roasters tend to roast “lighter” and have done so for a while. I almost think that getting better beans (they have okay beans but were blown away when I used Ruby beans in the clever dripper) and a drip machine is the most reasonable… but that doesn’t feel like a “great” solution.
