Kenyan specialty has the most recognizable acidity profile in the world. The country's combination of high altitude, volcanic soil, the SL-28 and SL-34 cultivars, and a uniquely demanding washed processing protocol produces cups that are unmistakably citric, blackcurrant-forward, and intensely sweet — what's sometimes called "Kenyan acidity" because it's a singular character. Production concentrates around Kiambu, Nyeri, Kirinyaga, and Murang'a in the central highlands, with smaller specialty volumes coming from Embu and Meru. The Kenyan grading system (AA, AB, PB, C) refers to bean size rather than cup quality, but AA grades from top cooperatives like Karatina, Kangocho, and Gakuyuini consistently deliver the highest-scoring lots. Kenya doesn't experiment much with non-washed processing; the wash is the tradition and the structure that defines the cup.
