Cherrybook Index (CBI)

Evidence-of-quality score, not a cup score. Methodology

63

Sparse signal

Confidence2 of 7 signals on file

Score is heavily shrunk toward 50; treat as a placeholder until more sources arrive.

How confidence affects the score

Coverage measures signal availability, not cup quality. This coffee has 23% of the signal universe on file. Missing sources are dropped, remaining weights are renormalized, and the result is shrunk toward a neutral 50 baseline by 43% so one thin signal cannot carry the score on its own.

The math on file: renormalized base 73.1 shrunk to 63.3 = 63.

Two live Reddit sources present SEY positively, with qualifications. A detailed brewer found one rested coffee fruity, juicy, delicious, and special, but said it was not always easy to brew and reported inconsistent cafe pourovers. Another commenter describes SEY beans as well roasted, without burnt or toasty flavors, and says they keep well.

I posted about Sey Coffee a few months ago and got lots of feedback- "Why is there so much disagreement about Sey? They're considered one of the best US roasters; but a bunch of people say their coffee is under- developed, tastes like hay, hard to brew, etc". I'm on my second bag now-José Arcadio Caro- which got great.

  • r/pourover · 10↑ · Atmosed beans seem to be aging faster than they should .. Am I missing something?

I realize this may well be true. I drink a lot of Sey as well. What is the longest you have kept Sey beans going? After roast / after open? Have you ever kept them long enough that you’ve decided they’re “dead” and you throw them out? What was that date? I wonder if Sey beans are a weird subject for this experiment (my
