Today I used medium-dark whole beans from Olympia-Morning Sun with a 5 day old roast date (freshest I have used) in a french press. 31g and 500ml Grind setting on Baratza Encore ESP: 26 Medium Steeped for 4min, then stirred, and removed foam.
