Ethiopia is the genetic homeland of arabica and the reference origin for floral, citric, tea-like specialty profiles. The cup most associated with the country (jasmine, bergamot, lemon, occasionally white peach or stone fruit) comes from the Yirgacheffe and Sidamo regions in the south. Guji has emerged in the last decade as a distinct region within Sidamo with its own naming, often producing slightly more body than Yirgacheffe. Most Ethiopian specialty is processed natural (sun-dried with the fruit on) which amplifies the fruit characteristics; washed Ethiopians are cleaner and more floral but harder to find. The country's "heirloom" varietal designation conceals an enormous diversity of indigenous material: JARC research selections like 74110 and 74158, plus regional landrace names such as Wolisho, Dega, and Kurume. Buying Ethiopian is more producer-driven than varietal-driven; trust the export company (Daye Bensa, Ture Waji, Tesfaye Bekele) more than any single farm name.
