Ethiopia is the genetic homeland of arabica and the reference origin for floral, citric, tea-like specialty profiles. The cup most associated with the country — jasmine, bergamot, lemon, occasionally white peach or stone fruit — comes from the Yirgacheffe and Sidamo regions in the south. Guji has emerged in the last decade as a distinct region within Sidamo with its own naming, often producing slightly more body than Yirgacheffe. Most Ethiopian specialty is processed natural (sun-dried with the fruit on) which amplifies the fruit characteristics; washed Ethiopians are cleaner and more floral but harder to find. The country's "heirloom" varietal designation conceals an enormous diversity of indigenous material — JARC research selections like 74110 and 74158, plus regional landrace names such as Wolisho, Dega, and Kurume. Buying Ethiopian is more producer-driven than varietal-driven; trust the export company (Daye Bensa, Ture Waji, Tesfaye Bekele) more than any single farm name.
