Johan Vergara's coffees originate from the Huila region of Colombia, cultivated across an altitude band spanning 1400 to 2100 meters. The varietal landscape features a mix of traditional and distinctive cultivars, including Red Bourbon, Yellow Bourbon, Sidra, Bourbon Sidra, and Chiroso. The process portfolio reflects experimental and traditional methods alike, with representations of anaerobic natural, natural, carbonic maceration, and anaerobic washed treatments. Four different roasters currently carry lots from this producer, contributing to a total of six coffees recorded in the catalog. Recent catalog examples include a Bourbon Sidra treated with a thermal shock yeast anaerobic natural process roasted by SOT Coffee Roasters, a Yellow Bourbon subjected to carbonic maceration by Press Coffee Roasters, a Sidra processed via yeast anaerobic natural by Rogue Wave Coffee, a Chiroso using a yeast anaerobic washed method also from Rogue Wave Coffee, and Red Bourbon lots prepared with a natural process from Hola Coffee Roasters. The range of yeast-inoculated and thermal shock treatments highlights a strong focus on advanced post-harvest processing within the catalog data.
