Their varietal portfolio centers on Caturra and Catuai, alongside plantings of SL28 and SL34. The producer applies a diverse range of processing methods across their harvest. Their catalog features washed, natural, anaerobic natural, black honey, and red honey preparations. Ten individual lots from the Chacon Family appear in the index, supported by seven different roasters. Three of these offerings are currently in stock. Their lots achieve an average Cherrybook Index of 57.3 across the catalog. Recent catalog examples include the Costa Rica Las Lajas SL-28 Natural roasted by Durango Coffee Company, Las Lajas Black Honey and Red Honey offerings from Five Senses Coffee, and a washed Caturra and Catuai lot named Green Dragon from Stone Creek Coffee.
