Guatemalan specialty is defined by clean, structured, chocolate-and-stone-fruit profiles that resemble what most American specialty buyers picture when they think "balanced specialty coffee." The country's eight officially-defined regions — Antigua, Acatenango, Atitlán, Cobán, Fraijanes, Huehuetenango, San Marcos, and Nuevo Oriente — each produce distinct character; Antigua and Huehuetenango carry the most specialty cachet. Guatemala's specialty story is producer-driven; multi-generational families (the de la Cerda family at El Socorro, the Aguirre family at El Injerto) have spent decades building relationships with American and European roasters. The cultivar palette favors Bourbon, Caturra, Catuai, and Pacamara — the latter a Salvadoran cultivar bred from a Pacas × Maragogype cross that delivers larger beans and richer body when grown well.
