Brazil produces more coffee than the next two origins combined, and most of it is commodity. But Brazilian specialty — which exists, often gets overlooked, and is increasingly produced by serious specialty operators in Minas Gerais and São Paulo — has its own distinctive character: low-acid, body-forward, chocolate and nut profiles that anchor espresso programs at top cafes globally. The specialty regions to know are Cerrado Mineiro (officially recognized origin), Sul de Minas, and Mogiana (Espírito Santo Mountains). Most Brazilian specialty is natural-processed (sun-dried), which suits the country's reliable dry harvest period; pulped natural ("desmucilado") is also common. Varietal mix favors Yellow and Red Bourbon, Catuai, and the disease-resistant Mundo Novo. The recent specialty story is producer-led experimentation with anaerobic ferments and microlot-level traceability — names like Daterra and Sertãozinho Estate are pushing what Brazilian specialty can be.
