Peruvian specialty is one of the most under-bought origins relative to quality. The country produces large specialty volume — Cajamarca, Amazonas, San Martín, and Cusco are the main specialty regions — but distribution to Western roasters is patchier than for Colombia or Brazil. The cup tends toward gentle sweetness, clean acidity, and a mid-body chocolate-citrus profile that pairs especially well as a blend component. The country's specialty growth in 2026 is being driven by smaller producer cooperatives like the Flores family in northern Peru and small-batch experimentation with anaerobic and honey processing. Peruvian Geisha is rare but rising; producers like Faustino Flores have been quietly building reputation programs.
