Salvadoran specialty is small but historically significant — the Pacas varietal originated here, the Pacamara hybrid (Pacas × Maragogipe) was developed here, and decades of civil war created a generational gap in the country's coffee infrastructure that the specialty rebuild has only recently closed. Apaneca-Ilamatepec and Chalatenango are the main specialty regions. The cup is often described as "soft" — gentle sweetness, modest acidity, a mid-body that reads as polished rather than punchy. Salvadoran specialty is one of the easier origin recommendations for someone moving from supermarket coffee into specialty for the first time; nothing in the cup is jarring.
