Panama is where Geisha became Geisha. The 2004 Hacienda La Esmeralda Best of Panama auction lot — an obscure varietal from Ethiopia replanted in Boquete — set a record at $21/lb green and changed specialty coffee forever. Twenty years later, Panama remains the reference origin for Geisha. The country's specialty production concentrates in Boquete (the iconic Geisha region) and Volcán (where Finca Deborah, Finca Sophia, and Finca Hartmann sit at 1,800-1,900m). Panama doesn't produce volume — total annual specialty output is small — but per-pound prices regularly clear $200/lb at auction and $40-60/lb retail. The country's recent specialty story is producer-led process diversity: anaerobic naturals, lactic ferments, multi-day fermentation arcs that extract intensities the original Geisha cultivar didn't naturally show.
